For over one hundred years, the cafés, bistros, brasseries, and "les zinc" of Paris have had their zinc bars, some magnificent, others quite simple. Standing behind these bars the owners would hold court with their patrons, affably dispensing political positions as well as beverages containing varying amount of alcohol and caffeine — such beverages sometimes relating to the time of day — café au lait in the morning, wine at lunch with café to follow, aperitif, wine, café surrounding dinner, and so forth. One hundred years ago mornings would often include an impressive coterie of workers quaffing a glass of wine to accompany their café au lait.
